DIRECTOR OF FOOD AND BEVERAGE plans, directs and coordinates all activities of Hotel F&B Department including Hotel Restaurant, Bar, Room Service and Catering Department.
This is also a hands on chef position which includes active cooking requirements
Develop menus and set service standards.
Monitor compliance with all health, liquor and government regulations regarding food preparation and serving as well as alcohol serving for all areas.
Monitor food preparation methods, portion sizes, and garnishing and presentation of all food to ensure that food is prepared and presented in an acceptable manner.
Ensure excellent guest service and resolve any guest complaints regarding food quality or service.
Coordinate assignments of personnel to ensure economical use of food and timely preparation
Monitor budget and payroll records and review financial transactions to ensure that expenditures are authorized and meet budgeting.
Maintain food and equipment inventories and keep accurate inventory records
Schedule staff and assign duties for front and back of house.
Establish standards for personnel performance and the highest guest service standards.
Know and enforce all local health department sanitation laws and Alaskan liquor laws
Provide training for staff and meet corporate quality standards, establish and enforce food specifications, portion controls, recipes and sanitation.
Coordinate par stock levels; monitor and assess portion size, visual appeal and taste of items served
Control food, alcohol and labor costs while maximizing guest satisfaction.
EDUCATION AND EXPERIENCE REQUIREMENTS:
2 year degree and at least 5 years of experience in a hotel or a related field.
Previous supervisory experience is required.
Knowledge of health department regulations and state liquor laws.
