Responsible for the day-to-day operations of Rock and Brew’s restaurant, by performing the following duties personally or through the appropriate supervisors and staff. Mentors team to assure restaurant’s policies and procedures are being followed

Establishes food and beverage costs and monitors purchases of supplies and equipment

Establishes procurement procedures and standards

Assists marketing with promotions for food service areas

Weekly one-on-one meetings with members of the management team

Develops budgets, reviews financial transactions and monitors budget to ensure efficient operation, and to ensure expenditures stay within budget limitations for casino food and beverage operations.

Monitors and ensure customer satisfaction of food service and atmosphere.

Coordinates training schedules for all FOH new hires with their job group manager or leader. Job groups include: servers & cocktails, food runners and expos, bartenders and barbacks, front desk and bussers.

Monitors training program and testing with FOH job group managers.

Using pre-shifts, hot schedules email blasts, POS emails, bulletin boards, shift change meetings and one-on-ones

Creates staff master schedules to budgeted sales and weekly holds scheduling managers and job group supervisors accountable to create schedules to master. Schedules must be completed and turned in to GM

Monitors training program using certified trainers

Forecasts sales and creates budgets working with Executive VP of Ops, F&B Manager

Must have knowledge of inventory control systems and general accounting standards

Familiar with computer based POS systems in a DOS or Windows based environment

Responsible for verifying that all FOH staff has their Certified Food Handler’s Certificate

Follow established company and departmental standards for personal appearance and behavior

Other duties as assigned

Supervisory ResponsibilitiesIs responsible for the overall direction, coordination, and evaluation of this department. Carries out supervisory responsibilities in accordance with Rolling Casino’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees, planning, assigning, and directing work, regarding and disciplining employees, addressing complaints, performance evaluations and resolving problems.Education and/or ExperienceBachelor's degree (B.A.) from four-year college or university and/or five years related experience and/or training, or equivalent combination of education and experience. Experience working in a casino environment preferred. Language Skills Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to write reports, business correspondence, and procedure manuals. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.Mathematical SkillsAbility to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.Reasoning AbilityAbility to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.Certificates, Licenses, RegistrationsGaming license issued by the Paskenta Gaming Commission. TipS certification as trained at Rolling Hills Casino. Food handler's permit from a relevant government agency.
