Pennyroyal Farm, an estate Winery and Farmstead Creamery is hiring a new Head Winery Chef. We are located in Boonville, CA in Mendocino County. We are a small kitchen but we do a diversity of things, including a bar snack menu from 10-5 pm, a small lunch menu, by apt food and wine pairings, stocking a deli case with farm fare, and occasional farm events, wine events, and private events. This is a full-time, salaried, exempt position.

Overview of Responsibilities:

As Head Chef you will be responsible for all aspects of managing the kitchen as well as kitchen staff, which include the following:

- Create, implement and execute seasonal food items and production schedules for Retail Deli Program and

lunch service at Pennyroyal and Navarro vineyards utilizing garden produce, estate meats and farmstead cheeses

- Oversee daily food service, food running, bussing and dishwashing

- Manage/review all BOH food and labor costs for deli, kitchen and special events in accordance with GM's budget and expectations

- Maintain all spoilage inventory, egg inventory, deli/retail inventory, estate meat inventory, all flatware, catering supplies and service ware for daily service and private events

- Manage/schedule service on all kitchen equipment (including hood/fire/ansul system), small wares, refrigeration, knives and hand tools. Work with maintenance department and GM on maintaining caliber/quality of in-house equipment and fixtures

- Work in tandem with marketing manager, events manager and TR manager to execute service of special events and private/public functions

- Write/publish BOH staff schedule monthly and manage PTO requests in relation to specialevents, wine and food pairings and holidays

- Work and self-manage a flexible 40-50 hr a week schedule that will include nights, weekends and holidays and vary based on production, foot traffic and event schedule

- Create products and/or recipes for cheese club shipments, marketing catalogues/promotions, wine club gifting, corporate gifting and seasonal holiday sampler packs. Work with media manager on food styling for marketing materials as needed.Must be at least 21 years old.

Qualifications:

- Excellent knowledge and ability in quality/seasonal/scratch food production, fundamental cooking techniques, costing, scheduling, multi-tasking, seasonal cooking, cheese, wine, winemaking and food and wine pairing

- Excellent inter-personal communication skills and willingness to work as part of a team; ability to communicate effectively with customers, employees and management

- Ability to visually/orally examine products for quality, consistency, flavor and style

- Ability to create a sense of urgency, positive atmosphere and safe work environment for employees

- Ability to train new staff members on protocols, expectations and technique

- Must be flexible and able to easily adapt under pressure

- Highly skilled in time and project management

- Excellent attention to detail, organization and cleanliness

- Strong work ethic and integrity

- Proper handling/maintenance of knives

- Possess California Manager Food Handlers Certification

- 3-5 years of Executive Chef Experience preferred

- Valid Driver's license and clean driving record required

Bilingual English/Spanish is a huge plus
