$28 to $32 per hour DOE + bonus potential

Position Purpose: The responsibility of this position is to monitor the operation of 9 Aztec Grill kitchens. Special emphasis should be placed on training Lead Cooks and cooks in product assembly, complying with all health codes and standards, quality control, inventory control, portion size, and vendor relations. The position works closely with Corporate Operations to ensure strict alignment to brand standards.

Job duties include but not limited to:

Oversee standards and operations of 9 Aztec Grill kitchens in Sonoma, Mendocino and Lake Counties.

Assist in the training of new cooks and Lead Cooks on all aspects of the food prep, recipe adherence, food safety, safe work practices, and hygiene.

Work with Corporate Operations to identify efficiencies through menu engineering, SKU optimization, streamlining processes, and development of training manuals.

Assist with staffing needs and scheduling (not required to cover shifts but can assist as available and/or communicate with other stations to provide coverage)

Monitor all cook’s meal preparation, adherence to recipes, portion control, food handling, (speed and professionalism) and cleanliness.

Order necessary supplies to support the facilities. Make recommendations for equipment as needed.

Assure adequate food inventory is on hand from food service supplier. Aid with fill-in orders as needed.

Oversee inventory control and vendor product check in. Ensure accuracy of order guide.

Monitor raw food quality from all suppliers.

Oversee accuracy of customer orders. Work with Store Manager to ensure CSR compliance with accurate orders and cooks compliance with assembly.

Periodically conduct price surveys of competitors and provide them to Brand Director.

Be liaison between Health Department and Store Manager.

Ensure brand identity of Aztec Grill (including signage and merchandising) throughout all operations.

Report to the VP of Operations and Marketing on a weekly basis and have regular communication with regional DM.

Physical Requirements: Must be able to drive between stores on a regular basis. Occasional lifting and movement of case goods below 40lbs.

Working Conditions: Driving to 9 kitchens located in Sonoma and Mendocino counties. The Southern Aztec Grill Trainer spends the vast majority of their time in the kitchens overseeing operations.

Physical requirements:

majority of time spent standing and walking

driving from location to location. Some days will require long periods of driving, exceeding an hour one way

regular bending, twisting, squatting, reaching, crouching, and lifting

Reporting Relationships: The Southern Aztec Grill Trainer reports to the VP of Operations and Marketing

Qualifications:

Education: Commercial cooking experience required. Sonoma or Mendocino residency is necessary. Management experience a plus! Clean driving record.

Job Knowledge/Skills Required:

Bilingual in Spanish and English. Fluency required.

Knowledge of all levels of restaurant business

Working knowledge of how to use small kitchen utensils and large equipment (meat slicer, fryer)

Communication and human relation skills

Basic computer literacy
