Description:
This role plays a key part of the Esalen Kitchen team. You will be expected to perform a variety of duties from meal preparation to improving the overall dining experience of our seminarians and cleaning, organizing and keeping the kitchen area and cooking tools and equipment sanitized. This role requires shift work, reports to the Kitchen Manager and is located on property in Big Sur.
What will this role do?
Prepare a variety of food items for cooking
Brew and maintain coffee service items
Wash, peel, mix and/or cut food items, including fruits, vegetables, or certain types of meats
Portion or wrap food items or dishes
Store food in containers and in the fridge or freezer
Weigh or measure ingredients
Re-fill kitchen condiment bottles and shakers
Stack and store food supplies, equipment, or other utensils in the kitchen
Wipe down kitchen surfaces using proper sanitizers
Clean any used kitchenware (e.g., knives) or dishes
Empty the garbage or squeeze out the mop into a bucket
Take out trash bags from kitchen to garbage receptacles and compost bins
Maintain and stock front of house items
Ensure the cleanliness and presentation of all food and beverage areas
Arrive in a reliable and timely manner, this position works on-site.
Wash dishes
Verify and stock inventory
Keep the dishwashing area clean and safe
Keep the receiving area clean, including breaking down boxes, organizing recycling, hosing down area
Support the community and kitchen policy of composting and recycling
Mop floors, cleaning equipment and walk-in areas
Clean bathrooms
Participating in 15-minute attunements as required
Other various tasks as assigned
Qualifications + Requirements + Skills
Previous experience working in a restaurant setting is preferred.
Food Handlers Permit
Basic Knife Skills
Punctuality and timekeeping
Ability to work under moderate pressure with strict timelines
Strict adherence to safety and sanitation standards
Move quickly and efficiently in small and sometimes crowded spaces
Ability to react and respond calmly and graciously in stressful and demanding situations
Ability to work well in a team-oriented environment
Ability to lift 50-pound boxes and bags
Physical Requirements
While performing the duties of this job, the teammate must be able to maneuver on uneven ground, stand for long periods of time, often carry and lift up to 50 pounds, operate food preparation appliances and machinery, tolerate exposure to changes in temperature, and be able perform daily repetitive hand movements as it pertains to food preparation.
