Pacific Coast Spirits is the culmination of a decade of passion, education and adventure. We create handcrafted artisan spirits with a balance of creativity, innovation and old world techniques. We use only premium ingredients, sourced as locally as possible to the Pacific Coast, developing spirits and farm-to-table cuisine, representative of this beautiful region.
DISTILLERY
We make our handcrafted small batch spirits from scratch. We dont start with pre-made products. We create our product from the raw ingredients, grains and in some cases fruits. We take pride in knowing where our ingredients are from, that our grains are non-GMO and our fruit is not mechanically harvested. Many times we even know the farmer that grew them. We thrive on knowing that the same pride that we put into our finished product was given to the ingredients being grown to create it.
BOUNTY
Being an integral part of a community should always be a main focus of a restaurant and this is true to the core of our ethos. The restaurant and distillery will be working hand in hand to source local ingredients and sustain local family farms. Spent grains from distilling will be sent to California ranches to feed livestock. We use spent corn mash from our California bourbon to make grits and cornbread. We cure meats and preserving foods is another way to use every part of an animal or to make sure that no vegetables from the seasons harvest goes to waste. Social, sustainable food in a family friendly atmosphere is the aim of our business and is what drives us every day. We are a destination for seekers of true local craft.

Setting up station with cooking utensils and equipment,
Setting the station with prep to meet predetermined pars.
Studying each recipe and gathering all necessary ingredients for prep
Cooking food to meet restaurant standards while maintaining proper ticket times
Keeping station clean and organized.
Properly and timely break down station and perform closing kitchen duties, including mopping floors, cleaning work surfaces, wrapping, labeling and condensing food items, taking out trash, etc
Monitor food stock
Check freshness of food and discard out-of-date items
Experiment with ideas and suggest new recipes
Be compliant with all health and safety regulations within the kitchen areaQualifications
Proven work experience as a line cook
Hands-on experience with various kitchen equipment (e.g. vacuum sealer, fryer, combi oven, robot coupe, vita mix, meat grinder, and pasta makers)
Knowledge of culinary, baking and pastry techniques
Leadership skills
Ability to remain calm and undertake various tasks
Excellent time management abilities
Up-to-date knowledge of cooking techniques and recipes
Familiarity with sanitation regulations
Culinary school diploma preferredAdditional Information
