Le Central is seeking an experienced Chef de Cuisine. Opened in 1974, Le Central is an established San Francisco restaurant that offers a seasonal menu inspired by traditional French cuisine. Le Central's Chef de Cuisine is fully responsible for the day-to-day execution of all aspects of kitchen operations. We are looking for a strong & passionate leader who can develop an outstanding team that consistently delivers high quality food, is extremely efficient, and adheres to all heath code requirements.
As Chef de Cuisine, you will collaborate directly with both owners. Strong communication skills as well as a high level of professionalism are a must. As CDC, you will be fully responsible for inventory, ordering, food cost, kitchen labor cost, scheduling, kitchen staff management, kitchen staff recruitment, kitchen staff training/development and also partially responsible for menu development.
Primary Responsibilities:
Recruit and train all kitchen staff
Schedule all kitchen staff, filing open shifts as necessary and ensuring sufficient staff
Work on the line as needed
Function as direct supervisor to all kitchen staff and enforce restaurant policies
Collaborate with owners to plan daily specials, seasonal a la carte menus, private party menus & special event menus
Continual training and development of all kitchen staff
Train kitchen staff in food safety and health code requirements and ensure follow through
Create food descriptions for servers as well as recipe & presentation guidelines for kitchen
Continual training of FOH staff through daily line ups
Manage labor, food and smallwares costs within target numbers
Accurately complete monthly food inventory
Daily ordering from vendors
