- ServSafe Certificate (Manager ServSafe preferred)
- Reliable, responsible, and dependable, and fulfilling obligations
- Honest and ethical
- Willing to take on responsibilities and challenges
- Accept criticism and dealing calmly and effectively with high stress situations.
- Attention to detail.
- Cooperative attitude, and pleasant with others on the job.
- Willing to lead, take charge, and offer opinions and direction.
- Communication skills.
- Expertise on seafood (buy, clean, portion, cook)
- Expertise on meats. (buy, clean, portion, cook)
- Knowledge and experience with Mediterranean cuisine.
- Manage waste and food cost.
- Inventory control.
- Labor Cost
- Train new staff and current staff.
