Peach Street Distillers has been distilling in Palisade since 2005, in fact we have Colorado Distillers License 001. We built our still here to showcase the agriculture of this magical place.
The innovative minds behind both Ska and Peach Street are joining forces to enhance the Legion of Ska and Peach Street to open Boulders first Brewstillery. A concept that will showcase both crafted beverages served up alongside a great food concept that mirrors a pride in local farmers, and harkens back to both the Container at Ska and Foodery at Peach Street.
About the Job
We are seeking talented, enthusiastic, positive energy folks to join our new culinary venture. Ska Street Brewstillery in Boulder will focus on fresh, locally sourced, yummy food; made from scratch with lots of love. A passion for food and providing a great time to folks visiting the brewstillery is a must. You are passionate about the overall vision and direction coming from the board at Ska Street as well as work with resources and direction from the central culinary director for all Ska and Peach Street entities. The Ska Street menu will echo the ethos in both the Ska and Peach Street brands.
Responsibilities
Development and execution of static menu
Development and execution of specials, catering and or large party events/menus
Development and implement all control systems to include: order guides, ordering, recipes, station check sheets, job descriptions for BOH, standard daily operating procedures, budget, inventory spreadsheets, inventory, bid sheets, training manual, scheduling
Conduct hiring interviews for all BOH positions and corresponding performance evaluations
Responsible for development of BOH staff training for opening as well as ongoing hiring and training for BOH staff
Training of BOH and FOH staff on customer service, menu knowledge, food safety
Responsible for achieving budgeted prime costs and taking corrective action when needed
Foster farmer/chef partnerships within local community
Coordinate with GM and Front of House Management team on special events, functions, catering events, happy hour promotions
Conduct daily menu meetings with BOH/FOH pre-shift
Work directly with GM for forecasting sales and setting labor targets for BOH
Maintain all kitchen equipment cleaning and regular service/maintenance
Our Ideal Candidate will have
Minimum of 5 years previous executive chef/kitchen manager position in mid to high volume establishment
Proven menu development and execution
Positive professional attitude
Team player/collaborator
Strong multi-tasking skills
Current ServSafe Food Protection Manager Certification
Culinary degree preferred but not mandatory
