Summary of Job Description:

Our award-winning French Alpine Bistro is looking for a professional SOUS CHEF who can help manage our kitchen staff and deliver our delicious recipes and provide extraordinary dining experiences that keeps our guests coming back for more. We are seeking individuals who are passionate about cooking, love the world of food and who would like to learn more about traditional French and Alpine cuisine. The applicants should have experience in the food service industry and are committed to the impeccable food presentation and garnishing , which is important for impressing our guests.

The successful candidate will assist the Lead Chef in both culinary and administrative tasks while communicating with the management team. We're looking for a professional who is dedicated to food quality and sets high standards for their output. Work with our French Star Chef Eric Francou:

Before coming to the United States, Eric worked in multiple Michelin-starred restaurants in Europe, including 'Bruneau in Belgium' and 'La Bastide Saint Antoine' in

Lyon. (He even worked as a private pastry chef for army colonels in the French military).

Chef Eric made a name for himself, working in New York as Executive Chef of Mad 28.

Now he dazzles our guests with authentic French Alpine cuisine.

The candidates can start immediately.

Responsibilities:

Create schedules for kitchen staff to ensure optimum resource management and speed of service

Train new and existing kitchen staff on the preparation, arrangement and plating of dishes per the current menu

Ensure all staff members adhere to culinary standards and regulations

Respond to customer inquiries and concerns personally

Design new menu choices based on seasonal ingredients and customer demand

Track, record and replenish inventory as needed

Cross-train kitchen staff on multiple stations

Assist lead chef with pricing menu items

Research new developments in French cuisine and apply knowledge to your repertoir

Prepare basic components of each dish on our menu using our proven recipes

Memorize and utilize our serving portion sizes and all basic meal prep procedures used in the kitchen

Ensure that the kitchen, all food prep areas and all food storage areas meet restaurant cleaning standards: Maintain a clean and sanitary workstation area including tables, shelves, broilers, sauté burners, ovens, crepe makers and refrigeration equipment both during and after service

Work with a team of cooks to do portion prep work for other shifts when needed

Monitor product freshness

Set up and stock stations with all necessary supplies

Assure that each item is cooked to the Chef’s and guest’s specifications

Garnish each dish properly

Answer, report and follow executive or sous chef’s instructions

Stock inventory appropriately

Ensure that food comes out simultaneously, in high quality and in a timely fashion

Assumes responsibility for quality, food safety/sanitation and timeliness of products served

Maintain a positive and professional approach with coworkers and customers

Perform other related duties as assigned by the management staff

Attention to detail

Sous Chef Qualifications and Skills:

5+ years' culinary experience in a high-volume, full-service restaurant

Four-year degree or culinary school completion is preferred but not required

Experience preparing French cuisine

Knowledge of best practices for training kitchen staff and implementing kitchen procedures

High level of creativity and reliability

Flexible schedule required

Familiarity with menu costing procedure

High level of professionalism

Comfortable working with a team in a fast-paced kitchen environment

Comfortable working in a small open kitchen. Our customers love to watch the “show”!

Excellent organization skills

Speaking basic English is ideal; Spanish only is ok.

Must be able to work fast and under pressure

Attention to detail

True love for food and a passion for cooking
