Reports to the Fresh Market Manager.Utilizes fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipesEngages all senses: tastes, smells, feels, listens and observes all characteristics of each batch to maintain and elevate qualityRecords daily the weight of ingredients used, batch sizes, and amounts transferred to other outletsMakes variations in time cycles and ingredients used as necessary for succeeding batchesCares for and handles products with careful attention to quality control and waste managementWeighs, packages and labels mozzarella lab offeringsStocks display refrigerators neatly, accurately and in a timely mannerProvides guest service and information on mozzarella-making process to guestsCleans work station thoroughly following food safety best practicesEnsures collateral supplies are in stock and being utilized properly in the labPerforms other duties as required or assigned
