Summary:

Responsible for directing serving staff with daily activities. Helps maintain appearance of buffet including execution. Shows consistency with high levels of quality, service and customer satisfaction in accordance with established standards of service, presentation and sanitation.

Essential duties and responsibilities include the following. Other duties may be assigned.

 Welcome each guest personally within 30 seconds

 Communicate with guests using clear and enthusiastic words, tone and body language. Make guests feel welcome and appreciated through your actions.

 Ensures all servers and bartenders work as a team to maintain an effective atmosphere and efficient food and beverage service.

 Oversee daily maintenance and cleanliness of the restaurant and stations before, during and after shift to perform assigned duties with respect to set-up, side work and breakdown of restaurant and stations. Performs general cleaning tasks using standard hotel cleaning products to adhere to sanitation standards.

 Oversee buffet presentation making sure all food is well presented to customers.

 Work closely with Food & Beverage Director and Supervisor, Chef and General Manager.

 Manage and monitor activities of all associates in the department making sure they adhere the standards of excellence and to the guidelines set in the associate handbook, hotel policies and procedures, coaching, training, and correcting where needed.

 Maintain communication with Chef and other servers. Understand menu prior to opening and is aware of changes during service and communicate that to fellow servers. Understand timing of various items. Personally, convey any special requests to Chef.

 Be knowledgeable of all dining/bar and room service items, garnish, contents and preparation methods. Be prepared to answer any guest questions about the menu in a direct, concise way.

 Mix, garnish and serve alcoholic and non-alcoholic drinks for patrons of bar and dining room following standard recipes.

 Adhere to all regulations concerning the handling, storage and service of alcoholic beverages

 Check food before serving it to the guest to ascertain that appearance, temperature and portions are correct.

 Control operation of restaurant, bar and room service. Insures proper execution of service between team members.

 Awareness of hotel functions and special events and keep other serving staff informed.

 Be familiar with menu items and daily specials, wine list, cocktails and bar.

 Know and understand all comp and coupon policies and keep comp records in order.

 Circulate stations making sure guests are getting proper service and all employees are in stations and doing their jobs.

 Must be able to do any requirements for the following jobs - Food Server, Room Service Server, Banquet Server, Hostess and Bar. Must help staff when help is needed, by bussing tables, serving food, opening wine, etc.

 Assist with scheduling in controlling labor costs.

 Understand and comply all hotel safety standards.

Qualifications:

Education and/or Experience:

High school diploma or general education degree (GED); and a minimum of two (2) years related in the food service industry in face-paced, high volume restaurant experience and/or training; or equivalent combination of education and experience.

Certificates and/or Licenses:

Valid Florida driver's license. Food Safety Certificate preferred. ServSafe and TIPS certified preferred.

Language Skills:

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or associates of the organization.

Reasoning Ability:

Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

Mathematical Skills:

Ability to add and subtract two-digit numbers and to multiply and divide with 10's and 100's. Ability to perform these operations using units of American money and weight measurement, volume, and distance.

Computer Skills:

Proficient in Microsoft Office, including Word, Excel, PowerPoint and Email. Proficient in Point of Sales (POS) preferred.
