Coasters Taphouse in Cocoa Beach is hiring experienced cooks, prep cooks and dishwashers. Minimum of 2 years experience in a high volume kitchen. Must have reliable transportation, valid Food Handlers Certification, and flexible schedule. We offer competitive pay, $11-15 per hour based on experience to start. Verifiable Kitchen Management experience is a plus.

Coasters Taphouse Line Cook Job Description is as follows but not limited to:

Promote, work and act in a manner consistent with the culture and mission of Coasters Taphouse.

Be on time, no exceptions.

Come to work prepared to work. If employees want to eat, get drinks, use the bathroom, socialize, or engage in any other non-work related activities, they should arrive EARLY.

Kitchen uniform is casual (clothes employees dont mind getting dirty), but kitchen employees MUST wear non-skid shoes, and must have a Food Handlers Certification.

Attitude is everything. Employees must maintain a coachable, can-do attitude and expect regular constructive criticism.

Daily Procedures consist of the following, but are not limited to-

Inspect, clean and maintain food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.

Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, grills, fryers and steam tables.

Ensure freshness of food and ingredients by checking for quality and practicing proper rotation methods. (FIFO)

Ensure that proper portion control is maintained in order to control food costs.

Take responsibility for quality of products served.

Stock and maintain sufficient levels of food products on each station.

Inform a manager when items run low so that they may be replenished before they run out.

Inform a manager when items run out so that they may be 86d.

Season and cook food according to recipes or company standards.

Accurately cook burgers and steaks to appropriate temperatures. (Rare, Medium-Rare, Medium, Med-Well, Well Done)

Cook chicken, pork, and seafood to appropriate temperatures based on HACCP health codes.

Follow proper plate presentation and garnish set up for all dishes.

Ensure that food is properly prepared, cooked and served in an efficient fashion.

Begin cooking foods as tickets come in, in order to keep cook times low.

In the event that an item is sent back or considered improperly cooked, recook the item as quickly as possible without question. That item should be prioritized before all other items.

In the event that an item is rang in and requested on the fly, or something is called audibly with no check, that item should be cooked as quickly as possible and prioritized before all other items.

During downtime, restock, prep and/or wipe down equipment and work surfaces.

All cooks are expected to help each other, including the dishwasher. In the case that one cook is busier than another, the less busy cook is expected to pick up the slack!

Cooks are expected to assist other cooks during emergencies or rush periods.

Close the kitchen per Coasters standards. All surfaces clean, stations stocked, trash taken out and bags replaced, equipment cleaned and turned off, food stuffs properly stored, etc.

Attend all scheduled employee meetings and offer suggestions for improvement in a constructive manner.
