Sausage Maker/ Value Added Meat Processor

As a Value Added Producer/Sausage Maker at The Local General Store, you will be at the cutting edge of whole animal butchery in Hawaii. You will work alongside the butchers, using whole carcass beef, pork, venison, lamb, and chicken from local ranchers. You will take various raw cuts of meat and transform them into bacon, sliceable deli meats, sausages, corned beef, etc., while following Department of Health sanitation guidelines. You will be able to work with local farmers and in season produce to create soups, stews, terrines, pates, and other ready to eat products for customers. Job Duties:

Create a variety of unique sausage offerings

Able to work with knives, meat grinder, and meat slicer

Cure and smoke bacon, ham, and other deli meats

Receive inventory and ingredients

Maintain an organized and clean work station

Refill supplies when needed

Qualifications and requirements:

Must be at least 18 years of age

High school diploma or equivalent combination of education and experience

2 years previous restaurant/cooking experience, preferred

Must be able to frequently lift, maneuver and/carry up to 75 pounds

Must have TB Clearance

Must have Food Handlers Certification (can be obtained after hiring)

Able to work weekends
