Bakery Manager - Eataly Chicago

The Bakery Manager oversees the production of bread products for an Eataly, including but not limited to: breads, pizza alla pala, rolls, focaccia and seasonal items. The Bakery Manager leads and develops a team of Bakers, Pizza Makers, and the Assistant Baker Manager in a 24-hour-operating bakery.Reports directly to the Head Chef and reports functionally to the Head of Bakery Operations.Organizes the store’s Bakery operations to maximize profitability while upholding the company’s mission, values, policies, quality, and guest experience standardsBuilds and leads a high-performing team: sources and hires, effectively trains, motivates, evaluates, develops, and retains talentResponsible for administrative tasks such as writing employee schedules, approving vacation and unpaid time, and submitting payrollReviews financial information such as sales/costs and monitors budget to ensure efficient operation and spending within the specified budget; works with the Head Chef to correct any deviations from the budgetPrepares bread products for restaurant and retail operations in accordance with Eataly’s authentic Italian recipes and quality standardsMaintains and nurtures natural yeast, local and organic flour, and naturally leavened productsCollaborates closely with store leadership to ensure all necessary parties are aware of daily bakery activities, including absences, schedule coverage and product availabilityCommunicates with the Head Chef and Head of Bakery Operations on new recipes for the bakeryOrders and monitors inventory of all ingredients and products for the bakery, including tracking and documenting daily transfers and waste in the appropriate systemMaintains a clean and sanitary food production area according to Department of Health standardsAddressing guest and employee incidents; documents, investigates, elevates incidents in collaboration with store leadership and HR, including employee terminationsPerforms other duties as required or assigned
