We are seeking a miller/baker to help support our purpose-driven company, one bagel at a time.

KEY REQUIREMENTS:
Have a passion for all things bread, and a strong desire to work with freshly-milled flour
Have a commitment to quality service and food + beverage knowledge
Be able to lift at least 50 pounds regularly and frequently reach, crouch, squat + bend
Be able to exert well-paced mobility for up to 8 hours or as needed
Be able to work in a team environment + be willing to take direction
Be able to work in warm and cool environments
Be able to tolerate potential allergens, including tree nut, egg, dairy, gluten, soy, + shellfish
RESPONSIBILITIES:
Responsible for efficient daily milling production + activities to include but not limited to: monitoring wheat input and output, maintaining quality product going to flour bins, troubleshooting milling issues
Bagel dough production, in multiple varieties
Several different bread items including but not limited to brioche, sandwich loaves, english muffins
Heavy kettle and revolving deck oven work
Ability to scale and shape at a pace production requires
General understanding of bakers math and fermentation
Ability to maintain prep levels for flour and bakery items, and scale for next day’s production
Maintaining clean and organized work stations
Excellent time management and organization skills in a fast-paced, high-volume kitchen
Use commercial bakery equipment including our mill, mixers, divider/former, kettle + deck oven complying with safety standards
Maintain personal hygiene standards, including a clean uniform
Comply with health + safety standards for food, cleanliness, + safety of the restaurant
Perform additional responsibilities (as requested by shop leadership) at any time
We are looking for someone who is happy in routine and is eager to learn and will find joy in creating a consistent product from start to finish. We're willing to train and don't require bread baking experience however, you must be passionate about bread and pastries, have a minimum of one year culinary experience, good references, diehard work ethic, and an ability to commit to early morning hours, weekends, and some holidays.
