High volume from scratch regional American food. Must be able to fully prep, fully place out your station and any help in producing any special items or recipes given by chef or on duty sous chef. Must have efficient knife skills(and your own knives), be able to plate and expedite under pressure, work well with others, be respectful and on time. Must be able to butcher meat and cut fish to proper weight with minimal supervision after training. Must be able to make soups and sauces, often by recipe. Must enjoy cooking and working hard. Must be able to cook burgers to temp, cook fish properly, understand proper sanitation and take care of raw foods like your job depended on it (it does). Please do not forget one of the most important items, you must be able to enjoy cleaning your work space. No crybabies! Must have at least 3 years experience, consistent experience, (minimal job hopping). Open schedule preferred, and you have to send me a resume.
