About Marrow

Marrow is a neighborhood restaurant, butcher shop and specialty grocery, located in the heart of the West Village in Detroit. Marrow's mission is promote, utilize and advance a healthy, local, and sustainable food system. As both a full service restaurant and whole animal butcher shop our business serves as a community gathering place where our combination of skill, service, and experience sets us apart from any other business in town.

Line Position

A line position at Marrow will require a candidate be interested in whole animal butchery and it's integration into a restaurants day to day operations. Line cooks are expected to prep, stock, maintain and operate a busy PM station while also functioning as a part of a larger team. Teamwork and self starting are cornerstones of this position. Responsibilities range from simple knife work to flavor building sauce work. Proper cooling, storing and rotation is a core expectation. Completion of any task set forth by Marrow management under direction of the chef on duty will be required while also completing all other duties as assigned in a timely manner.

Responsibilities include:

Assure highest level of customer service.

Properly rotate and date all products.

Prep ingredients to specification.

Prepare foods to established specifications.

Proper storage of food items including, wrapping, dating and descriptions.

Notify chef if products and supplies need to be ordered.

Helps receive and unload deliveries.

Have familiarity with all menu Items.

Maintain a clean and orderly kitchen

Proper washing, rinsing, and sanitizing of all equipment.

Adherence to health and safety regulations

Store maintenance including fix-its & cleanliness.

Additional responsibilities may be assigned as needed.

Qualifications:

Ability to read, write, comprehend, and interpret documents

Kitchen and food handling experience +1 year primo experience

ServSafe preferred

Highest attention to detail, organization and cleanliness;

Great interpersonal and customer relationship skills;

Passionate about sustainable meat, farming and food education;

Excellent problem solving skills;

Positive attitude and ability to pitch in wherever needed an absolute necessity.

Available to work weekends and holidays
