Line Cook Job Description

Accurately and efficiently cook food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

Duties/Responsibilities:

Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in ovens, grills, fryers and a variety of other kitchen equipment.

Assumes 100% responsibility for quality of products served.

Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.

Portions food products prior to cooking according to standard portion sizes and recipe specifications.

Maintains a clean and sanitary work station area including tables, shelves, grills, fryers, pasta cookers, sauté burners, convection oven and refrigeration equipment.

Prepares item for grilling, frying, sautee or other cooking methods by portioning, battering, breading, seasoning and/or marinating.

Follows proper plate presentation and garnish set up for all dishes.

Handles, stores and rotates all products properly.

Assists in food prep assignments during off-peak periods as needed.

Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.

Attends all scheduled team member meetings and brings suggestions for improvement.

Performs other related duties as assigned by the Chef or manager-on-duty.

Dishwasher Summary of Position:

The dishwasher is responsible for maintaining cleanliness and sanitation standards for plate ware, glassware, tableware, cooking utensils, etc. by using the dish washing machine and manual cleaning methods. This position also ensures the dish washing area is maintained as a clean, safe and sanitary area.

Duties/Responsibilities:

Opens and/or closes the kitchen properly, follows all cleaning and closing checklists for all kitchen stations.

Wash, Sort and rinse dirty dishes, glassware, tableware, pots and pans, and other cooking utensils and place them in racks to send through the dish machine.

Sort and stack clean dishes. Carries clean dishes to the cooks line and other proper storage areas. Rewashes soiled dishes before delivering.

Change dishwater in dish machine frequently throughout shift.

Remove trash and boxes to dumpster area.

Sweeping and mopping of floors.

Sweep up trash around exterior of building and in the dumpster area.

General restaurant and restroom cleaning as directed.

Wipe up any spills to ensure kitchen floors remain safe and dry.

Must notify management of any issues with the dish machine running properly.

Attends all scheduled employee meetings and brings suggestions for improvement.

Performs other related duties such as helping to wash dishes as needed, cleaning and any other projects assigned by management.

Arrives to work 10 minutes prior to scheduled shift.
