Chef/Kitchen Manager- The Duck Pond

Work days and hours: 6 days per week. Off Tues or Wednesdays
Compensation: Starting salary plus seasonal bonus. $4128 per month - Completion incentive and bonus- 5% of restaurant net income during this period paid at the completion of service. Workmans Comp insurance and unemployment insurance paid. Relocation Bonus, Lodging arranged, signing bonus $1000
Duties:
You will ensure efficient restaurant operation, as well as maintain high production, productivity, quality, and customer-service standards.
Responsible for the overall operations for the back of house and kitchen area of a restaurant.
Hire staff, purchase food and stock, and make sure everyone is trained on proper food preparation and kitchen safety techniques.
Staff hiring- cooks, bussers,
Scheduling
Menu preparation.
Food Prep.
Food Ordering and delivery supervision.
Inventory
Restaurant supplies ordering.
Beer, wines, and spirts ordering- may be assigned to bartender or lead server.
Wood for smoker ordering
The primary food sold on the menu is Smoked BBQ- Brisket, Ribs, Pulled Pork/Burgers/ Whitefish
Big sellers- White Fish Basket, Whitefish tacos Pulled Pork tacos, Pulled Pork sandwich, All burgers, whitefish chowder, Whitefish bites, Brisket, Ribs. Whitefish sandwich.
We would like to have a couple of specials weekly. Mexican. Italian,
We sell around 30 different Michigan Craft Beers, some wine, and liquor.
(We are a restaurant that serves alcohol not a bar that sells food. )
Equipment- 36 flat top w 4 burners and oven . 2- 5ft. prep tables with refrigerators. 2- deep fryers, 2 Lang smokers ( 84 and 36 models) , 2 soup warmers, 4 freezers, 1 glass door refrigerator, 1 glass door merchandizer, 6 keg taps, 1 large walk in cooler, microwave, (buying this spring- Holding Oven), dishwasher, dry storage room., ice cream freezer. Outdoor gas grill 48.
