Location: Nellie’s Southern Kitchen at the MGM

Reports To: Executive Sous Chef

Employment Type: Full-time

Salary Range 85k-90k DOE

Position Summary:

We are seeking an experienced and passionate Executive Sous Chef to join our dynamic kitchen team. The ideal candidate will be a creative leader with strong culinary skills, a keen eye for detail, and the ability to inspire and manage a dedicated team. As the Executive Sous Chef, you will work closely with the Executive Chef to oversee daily kitchen operations, develop exciting menus, and ensure the highest standards of food quality and presentation.

Key Responsibilities:

Assist the Executive Chef in managing all kitchen operations and ensuring efficient workflow.

Oversee food preparation, production, and presentation to maintain consistent quality and standards.

Develop and implement menus, recipes, and food preparation techniques.

Manage inventory levels and ensure proper storage and handling of food items.

Monitor and control food costs, labor costs, and other kitchen expenses.

Supervise, train, and mentor kitchen staff, fostering a positive and collaborative team environment.

Schedule and coordinate staff to ensure efficient kitchen operations.

Conduct performance evaluations and provide feedback for staff development.

Ensure compliance with health and safety regulations, including HACCP and local food safety standards.

Maintain cleanliness and organization of the kitchen and storage areas.

Collaborate with the Executive Chef to create innovative and seasonal Specials

Conduct regular tastings and menu reviews to ensure consistency and quality.

Interact with guests to gather feedback and ensure an exceptional dining experience.

Handle special dietary requests and ensure they are accommodated appropriately.

Maintain a strong presence on the kitchen line during service times.

Qualifications:

Proven experience as a Sous Chef or similar role in a high-volume, upscale dining establishment.

Experience in working alongside the local culinary union

Must have experience with working in partnership with the local culinary union

Culinary degree or equivalent professional training.

Strong leadership and management skills.

Excellent knowledge of culinary techniques, food products, and kitchen equipment.

Ability to work under pressure in a fast-paced environment.

Strong organizational and multitasking abilities.

Exceptional attention to detail and commitment to quality.

Excellent communication and interpersonal skills.

Knowledge of health and safety regulations and food safety standards.

Proficiency in Microsoft Office and kitchen management software.

Working Conditions:

Ability to work flexible hours, including evenings, weekends, and holidays.

Physical stamina to stand for extended periods and lift heavy items.

Exposure to hot and cold environments, as well as potential hazards such as sharp knives and hot surfaces.
