DESCRIPTION
Based in Truckee California, at the heart of the Sierra Nevada mountains, Old Trestle Distillery is looking for an Apprentice Distiller to help us deliver world-class experiences. Old Trestle was founded in Truckee CA by friends with a real passion for great experiences and a belief that the world's best spirit has yet to be made. Our founding team has extensive backgrounds growing global companies and beverage brands and we are looking for a teammate to support our distillery operations. We are inspired by innovation and are laser-focused on bringing great products to market and being part of our customers lives at some of their most meaningful moments. REQUIREMENTS & RESPONSIBILITIES
- Have an intimate knowledge of mashing, distillation, bottling, and all other day to day activities at the distillery.
- Must have a strong ability to problem solve, and work without immediate oversight.
- Be willing and able to train new hires on daily operations.
- Maintain production schedule to keep all employees (and yourself) in production mode.
- Distill fermented mash produced by the Apprentice Distiller, and fill in on tasks dropped by the Apprentice Distiller.
- Prepare barrels for filling, (I.e. swelling barrels, repairing leaks, etc.) and record the filling in Whiskey Systems.
- To write (as needed), and follow production SOPs.
- To input mashing and distillation data into Whiskey Systems.
- To coordinate and prepare shipments to distributors and have them ready for pickup.
- To make sure cases are erected, and bottles labeled prior to bottling (when possible).

YOUR BACKGROUND
- Proven success in previous roles.
- Experience in the distilling, brewing, and related science fields.
- Examples of professional and ideally personal passion and beliefs around spirits and how they should be made and delivered.
