About us and this project:

Hilltown Hot Pies (find us online @ hilltownhotpies[dot]com), a pizza pop-up and catering company will be “in residence” at Katchkie Farm, an organic vegetable farm in Kinderhook, NY, this summer-fall. Utilizing the on-farm wood-fired oven, we will be operating a pop-up pizzeria, highlighting the produce from the farm and the local bounty in the Hudson Valley. Customers will get to experience the beauty of Katchkie Farm and walk right through the fields to the outdoor pizza pavilion in order to pick-up their farm-inspired pizzas. Safety permitting, customers can either take the pizzas to go, or sit in a designated picnicking spot to eat their pies on the farm. It is an outdoor and safe setting perfect for the time we are in – when people desire outdoor dining experiences and uplifting and joyful settings more than ever. A portion of the proceeds from this pop-up will go to the Sylvia Center, which is the non-profit based at Katchkie Farm that seeks to educate young people in the Hudson Valley and NYC about healthy eating choices, culinary skills and nutrition. We’re proud to partner with them for this pop-up!

It takes a lot of work and flexibility to get a pop-up like this off the ground in a rustic farm setting. Every day, we will be prepping pizza ingredients and getting ready for dinner service in the on-farm commercial kitchen. We will then load up our coolers and gear, and transport it to the pavilion where the oven is (which is a short drive away from the kitchen) for service. This will be a dynamic job – not a traditional restaurant job by any means at all! Making and serving to-go pizzas in an outdoor oven on a working farm is no easy task, and we will constantly be dealing with logistics, moving things around, and being flexible as we work. There is nothing I love more than serving people great pizzas in a beautiful setting, and I can’t wait to potentially work with you to make this happen. We will be a team in the truest sense of the word, and it will require all of us chipping in together for this pop-up to be a success.

Job description: This will be a team effort, so we will all be chipping in to make this a success. I am looking to hire someone to work on the pizza-making side of the operation (“back of house” so to speak). You will either manage the oven/fire the pizzas utilizing our wood-fired oven, or stretch and top pizzas – depending on your experience and skill level. I love teaching new pizza makers, and am open to training as we go, but prior pizza/dough/oven experience is strongly desired. Again, because this is a pop-up on farm experience, there is more to this job than just pizza making. You will help with some prep work, and also transporting our food/gear daily to the on-farm pavilion, and then helping break down the pop-up at the end of the night. But at the core of this job, is pizza making, on a beautiful farm, in the Hudson Valley, using a gorgeous wood-fired oven. What could be better?

Weekly schedule: Right now, the pop-up’s public opening hours are scheduled to be Thursday-Sunday from 4pm-8pm. I anticipate being able to offer you 25-35 hours of work a week. The schedule would likely be (including prep, service, break down): 2-9pm from Thursday-Sunday.

Timeline: Right now, we project being open from mid-July (official opening date day July 16) to mid-September. As we see how successful the pop-up is, we might extend this, or add more daily opening days in (outside of Thurs-Sun). This is the first time this pop-up is happening, and with everything going on in the world, it’s a bit of an experiment. We hope to be open as much as is viable and possible throughout the summer-fall.
