Colloca Estate Winery is seeking a lead cook to run and manage our Wood Fired Kitchen restaurant. The role will be overseen by our Executive Chef, but will involve supervising and coordinating with other cooks, kitchen helpers, and food service staff in a commercial food preparation environment. Previous experience is required. Our expectation is for our Lead Cook to demonstrate a commitment to excellence in our menu preparation and execution in a high-volume kitchen scene. In addition to preparing most of the entrées the Lead Cook will also assist the Executive Chef in food preparation and be responsible for prepared ingredient inventory, and the management and direction of our food service team.

Skill Requirements

Excellent cooking and time management skills are needed. Attention to detail is a must for all aspect of the position, from ingredient inventory, food presentation appearance and taste, service wait times, and kitchen cleanliness. Organizational abilities and work flow management skills are also necessary to keep the food preparation process flowing and make sure dishes for groups of diners are finished at the same time. Guidelines governing the safe storage and handling of food in accordance with New York State and Cayuga County must be understood and fully adhered. To ensure the best performances from our team, good leadership and motivational skills are a must.

Job Duties

Assisting our Executive Chef with any required kitchen task, ingredient procurement from vendors, ingredient organization, ingredient preparation and inventory control, food preparation of menu, cleaning and breakdown, fulfilling our opening and closing procedures, preparing work schedules for team members, staff hiring, training, supervision, and termination.
