The Ramada Plaza Oceanfront Hotel and Beachcombers Tiki Hut Restaurant are looking to hire a commendable Executive Chef to manage and coordinate along with our Food and Beverage Manager our on site restaurant and banquet facilities. The Executive Chef attracts and retains kitchen staff, maintains a cooperative relationship with team members, optimizes staff productivity and serves as replacement in team members' absence. The Executive Chef will train staff to use new recipes, cooking techniques and equipment and will oversee line cooks performing food preparation. He/she will oversee delivery of food supplies, prepare special dishes and supervise overall kitchen operations during service as well as all banquet events.

EXECUTIVE CHEF RESPONSIBILITIES:

-ensuring promptness, freshness and quality of dishes.

-coordinating line cooks tasks

-implementing hygiene policies and examining equipment for cleanliness

-assures all banquet functions are ready and set according to client's specifications and requirements

-supports the restaurant in any and all situations, either front of the house or back of the house

-assists Food and Beverage Manager with ordering, inventory, managing budget, overseeing staff, approving time cards, correct problems when they arise, help with marketing ideas and any other tasks.

-designing new recipes, planning menus and selecting plate presentation.

-reviewing staffing levels to meet service, operational and financial objectives.

-helps with the hiring and training of kitchen staff, such as line cooks, food preparation staff and dishwashers

- performing administrative tasks, taking inventory of food and equipment supplies, doing purchase orders

-setting and monitoring performance standards for staff

-obtaining feedback on food and service quality and handling customer issues

EXECUTIVE CHEF REQUIREMENTS:

-2+ years culinary education

-5+ years experience in similar position

-advanced knowledge of food profession principles and practices

- excellent knowledge of BOH systems, ordering and inventory

-excellent communication skills

-ability to work under pressure and meet deadlines.
