Benbow Historic Inn located in Southern Humboldt County, CA is seeking an outstanding Sous Chef candidate to represent an upscale restaurant in a Boutique Hotel that serves straightforward, American Farm to Table cuisine.
The sous chef reports to the Executive Chef and is responsible for executing the Executive Chef's instructions by managing the kitchen staff. He\She performs a variety of duties in the kitchen and restaurant to ensure quality food & service in a timely manner.
The job involves executing the Executive Chef's orders in the kitchen, taking inventory of food supplies, ensuring that the supplies used in the kitchen are of top quality, managing waste, managing staff and is responsible for maintaining high sanitation standards in the kitchen.
Responsibilities:
Hiring, training and discipline of kitchen Team Members
Reviewing and evaluating all kitchen Team Members
Responsible for all kitchen administration
Responsible for cost control
Works with Executive Chef in developing additional menu items
Ensures consistency and portioning of all food
Responsible for in-restaurant purchasing
Ensures a clean and sanitary kitchen
Ensures upkeep, repair and maintenance of all kitchen equipment
Works the line where needed
Assists with prep and set up in the kitchen
Any other duties as needed
Responsible to see COVID procedures are followed
Required Skills:
Experience in all stations on the line
Has great decision making skills
Has superb organizational skills
Knowledge of correct portions and positions on plates
Proactive, punctual and a great communicator (must read, write and speak English)
Must be committed to our mission and culture

Required Experience:
Must have at least 3 years related in similar position
Hotel restaurant experience strongly preferred

Ability to apply common sense understanding to carry out simple one or two step instructions. Ability to deal with standardized situations with only occasional or no variables.
EDUCATION, EXPERIENCE, and TRAINING:
Less than high school education; and 12 months related experience or training; or equivalent combination of education and experience.
Knowledge of cleaning and sanitation products preferred.
