The staff of The Market Pavilion Hotel, Grill 225, and The Pavilion Bar are the standard of hospitality service in Charleston. POSITION DETAILS:

Recipients of this Station Chef (Chef de Partie) position will be working under the direction of the Executive Chef and Executive Pastry Chef in our extensive food and beverage operation consisting of our Prime Steakhouse (Grill 225), rooftop restaurant (Pavilion Bar) as well as our hotel and event operations for our award-winning luxury hotel.

Recipients of this position who prove to be versatile in their capabilities can enjoy the benefit of working in multiple stations within our two vibrant restaurants. This flexibility provides the recipient maximum exposure to a wide-range of foods, production methods and plating techniques.

Recipients will be positioned to experience the highest level of food production in Charleston's most multi-faceted and versatile hospitality operation.

THESE EXPERIENCES WILL INCLUDE:

Scratch pastry production, bread production and a full array of baking techniques.

Scratch dessert production, techniques and methods.

Grilling and Sautéing of Prime Beef steaks, chops, pork, shellfish and seafood from both

local and international waters.

Butchering: USDA Prime (42 day age) beef loins, poultry and fresh fish loins from both

local and international waters.

Extensive Fresh Seafood and Shellfish preparations such as: live lobsters, shrimp,

scallops, octopus, crab, oyster selections, caviar selections, fish roes and many-many

others.

Classic stock production: Fumet, Brown stocks, White stocks, bouillon and glace.

Daily production and utilization of the 5 Classic French Mother Sauces: Béchamel,

Velouté, Espagnole, Sauce Tomate and Hollandaise sauces as well as many variations of

these sauces that we consistently utilize on our menu daily.

Ideal Experience, as well as Limited Experience Applicants, will be considered.

Ideal recipients will have experience as a sous chef, saucier, line cook, pantry chef or fry cook.

Limited Experience Applicants are Invited to Apply:

Applicants who are actively involved in a culinary education program in the Charleston area that may not have previous cooking experience are encouraged to apply.

Additionally, aspiring hospitality professionals will also be considered if they have a desire and a passion for learning new culinary techniques. Our senior culinary team is dedicated to teaching and mentoring professionally minded individuals with all aspects of cooking. If you have a passion for the culinary industry, then we are willing to provide you with the knowledge base and experience necessary to grow your career.

SCHEDULE FLEXIBILITY:

The ideal candidate will have good schedule flexibility with the willingness to work weekdays, weekends and occasional holidays. Hours vary from morning to evening. Full-time applicants with wide-ranging schedule flexibility will be given first consideration for this position.

COMPENSATION:

Station Chef (Chef de Partie) Pay ranges from $13.00-$16.00 per hour based on the candidate's level of previous experience.

Complimentary personal vehicle parking (compact cars only) is provided in our private garage during periods of low hotel demand with this position.

Monthly Bonus Pay is also provided with this Station Chef (Chef de Partie) position.

Meals are provided at no charge to the recipient with this position.

Free Parking is Provided

Recipients of this position are provided with free parking 7 days a week during the off- season and Sunday - Thursday during high season.

PRE-EMPLOYMENT DRUG SCREENING PROCESS:

Pre-employment drug testing is a definite reality in our company, and is a mandatory requirement for all eligible candidates. Contingent upon the candidate's ability to advance beyond the interviewing and background screening process, eligible employees will then be instructed to report to our company's designated drug testing facility in person. An eligible candidate who successfully passes the drug screening test at our approved testing facility will then be provided a Passing Certificate of Documentation. This Passing Certificate of Documentation on record will be required before the candidate is potentially offered a final position within our company.
