Local retreat and conference center looking for new head chef

OUR MISSION: Sandscrest Foundation is a nonprofit conference and retreat center for the Episcopal Diocese of West Virginia. The mission of Sandscrest Foundation is to provide a place in which to nourish the soul, mind and body through the Spirit of Jesus Christ.

POSITION PURPOSE:The Head Chef shall serve the mission of Sandscrest Foundation by creating an atmosphere of hospitality through the meals we prepare and serve to all those who encounter Sandscrest. This is accomplished, in part, through innovative meals, effective kitchen management, and compliance with the standards and regulations of cleanliness and operations set forth by the West Virginia Department of Health.

COMPENSATION:This is a salaried position with a flexible schedule. Most events take place in the evenings and on weekends. Benefits include health insurance, vacation commensurate with tenure, retirement, and business travel reimbursement. Salary will be commensurate with experience. Candidates will need to undergo a background check.

RESPONSIBLE TO: Sandscrest Director

POSITION REQUIREMENTS:

Certification in West Virginia “Serve Safe” program or similar certification through the Department of Health.

Excellent cooking skills and creativity when it comes to food.

Ability to create menus that are innovative and profitable.

Deep understanding of hospitality service and the ability to provide a high degree of courteous service to guests, visitors, patrons, and staff.

Knowledge of food allergies and accommodations for dietary needs and restrictions.

Excellent leadership and management skills.

Ability to delegate tasks.

Ability to read, write and communicate instructions in the preparation and safe handling of foods, stores, and chemical cleaners.

Capacity to work under pressure.

Ability to lift, push, pull, basic kitchen equipment and supplies, up to 25 pounds.

Ability to stand for prolonged periods of time to prepare and serve food/meals.

SPECIFIC DUTIES

Kitchen Management:

Oversee daily operation of the kitchen.

Liaison with relevant food companies for food and supply orders.

Estimate food costs and ensure all purchases come within budget.

Maintain accurate and documented inventory of all food beverage stores.

Implement health and safety procedures in the kitchen.

Create innovative and cost-effective dishes and menus.

Direct work of kitchen assistants and servers to ensure timely completion of tasks.

Report any concerns of performance or conduct matters to the Director.

Assist Director in interviewing and hiring new kitchen staff and servers.

Monitor and control stock levels. Ensure correct stock rotation procedures are followed.

Food Preparation:

Maintain compliance with the standards and regulations of food preparation and operations as set forth by the West Virginia Department of Health and Serve Safe.

Cost out food and meals to meet budgetary needs of guests, groups, and Sandscrest.

Provide menus and cost information to the Director for approval, in advance of purchase and/or group arrivals.

Calculate portions of food needed for the number of guests expected.

Prepare and serve meals for guests as scheduled in a courteous and friendly manner.

Store foods that can be used over again, appropriately wrapped and marked.

Cleaning:

Maintain compliance with the standards and regulations of cleanliness and operations set forth by the West Virginia Department of Health.

Clean and disinfect all cooking and food preparation surfaces, equipment, and serving areas in accordance with State standards and regulations.

Wash and properly store dishes and cooking utensils.

Initiate detailed/deep cleaning on a quarterly basis.

Use appropriate chemicals and disinfectants in accordance with labeled instructions. Maintain inventory of such items and store them in approved and safe locations.

Other Duties:

Show hospitality to guests and diners through meals, presence, and interactions.

Assist in other areas of Sandscrest operations as needed and directed by management (e.g. answering phone calls, assisting with special projects, etc.).
