Republic Cantina features Tex Mex classics "done right," with some space reserved at the margins to get a little creative and build on the traditions of the cuisine. If you grew up with Tex Mex, you know that the culture around this food is a rich and fascinating one.
Located in a beautiful brick & mortar space (a former horse stable) in Truxton Circle. During the daytime we operate as a cafe, offering a full espresso program alongside a menu spotlighting breakfast tacos on housemade flour tortillas + other cafe fare w a Texan spin (think avocado Texas toast). In the evenings we transition to a full service sit down Tex Mex restaurant with all the staples sizzlin' fajitas, proper queso, and strong margs.
Our bar program is agave-centric and focused on classic cocktails in addition to a smallish beer and wine list. We're building a library of esoteric agave spirits (if you've been looking for a place to share your expertise of raicilla and bacanora with guests, we might be for you).
