BOH Pastry Assistant for a private pastry chef/start up business (Honolulu, HI)
Full-time or Part-time | $17/hr
A private pastry chef is seeking an energetic, detail-oriented, and organized Back of House Pastry Assistant to join them for wholesale, catering, and events pastry production. Do you love great pastries and coffee, have a positive attitude, and a willingness to learn? In this role, you will support production and have the opportunity to learn and master both viennoiserie and ptisserie in a professional kitchen environment.
Key Responsibilities
Daily Production & Prep
- Assist with daily production of viennoiserie and patisserie, including mixing, shaping, baking, and finishing pastries.
- Scale and measure ingredients accurately according to recipes and production sheets.
- Prepare fillings, creams, glazes, syrups, and garnishes.
- Follow standardized recipes and techniques to maintain consistency and quality.
Station & Service Prep
- Set up, maintain, and break down production stations in an organized and efficient manner.
- Refill and rotate items throughout service to ensure product availability.
- Label, date, and store products correctly, following FIFO (first in, first out).
Quality & Standards
- Uphold standards for taste, texture, presentation, and portioning.
- Check products for doneness and quality throughout production and baking.
- Communicate any product or equipment issues to the pastry lead/chef promptly.
Cleaning & Organization
- Maintain a clean, organized, and sanitary work area at all times.
- Wash, sanitize, and properly store tools, equipment, and utensils.
- Participate in deep cleans of equipment (ovens, mixers, sheeter, refrigerators, freezers, etc.).
- Take out trash and recycling and help maintain an overall tidy BOH environment.
Inventory & Deliveries
- Assist with receiving and storing deliveries; check for accuracy, quality, and rotation.
- Help monitor inventory levels of ingredients and packaging and communicate needs to management.
Food Safety & Compliance
- Follow all health, safety, and sanitation guidelines, including proper handwashing and glove use.
- Adhere to allergy, cross-contamination, and temperature control protocols.
- Comply with all BOH safety rules and use equipment properly.
Expectations & Requirements
Experience
- Minimum 1 year of BOH kitchen experience REQUIRED (pastry/bakery experience strongly preferred).
- Previous experience with viennoiserie, laminated doughs, or ptisserie is a plus but not required if you are eager to learn.
Schedule & Availability
- Must be available for some early mornings (4:00 AM start), weekends, and some holidays.
- Consistent punctuality and reliability are essential.
Skills & Attributes

- Strong attention to detail and organization.
- Effective time management skills; able to work efficiently during busy production periods.
- Able to follow recipes and directions, but also work independently once trained.
- Must be self-motivated and genuinely enjoy cleaning and maintaining an organized workspace.
- Comfortable working in a small team and communicating respectfully with others.
Physical Requirements
- Ability to stand for long periods in a fast-paced environment.
- Ability to lift up to 50 lbs and perform repetitive tasks (rolling, shaping, lifting trays, etc.).
Other
- Must provide your own transportation (parking available).
- ServSafe food handler certification a plus, but not required.
