Position Summary:
Doraku Sushi is seeking a passionate and experienced Kitchen Manager to lead our back-of-house operations. The ideal candidate will oversee daily kitchen operations, manage BOH staff, ensure food quality and safety standards, and help drive culinary excellence in line with Doraku’s high standards.
Key Responsibilities:
Oversee all kitchen operations including food prep, cooking, plating, and expediting.
Hire, train, supervise, and schedule BOH staff.
Maintain kitchen inventory, order supplies, and manage vendor relationships.
Ensure compliance with food safety, sanitation, and workplace safety regulations.
Uphold and enforce Doraku’s quality, portion, and presentation standards.
Monitor kitchen performance and costs, including food waste and labor efficiency.
Collaborate with the Executive Chef and General Manager on menu development and seasonal specials.
Manage BOH payroll, budgeting, and operational reporting.
Qualifications:
Minimum 3–5 years of kitchen leadership experience in a high-volume restaurant.
Strong background in Japanese cuisine, especially sushi and izakaya-style dishes.
Proven experience in managing kitchen teams and developing staff.
In-depth knowledge of health and safety regulations.
Excellent organizational and communication skills.
Ability to work flexible hours, including evenings, weekends, and holidays.
Culinary degree or formal training is preferred but not required.
