We are a private homeowner's resort located in Waikoloa. We are looking for an enthusiastic team player to join our Ohana.
The Executive Chef oversees all aspects relating to culinary operations including kitchen supply and food inventory, maintaining government regulations and monitoring customer satisfaction.
Knowledge of standards of food preparations, serving, kitchen procedures, food handling and safety practices
Ensures customer satisfaction by continuously exceeding expectations
Serves visually appealing high quality food items
Prepares and oversees all food production for the resort site
Develops unique cuisine appropriate menus. Gluten-Free, Vegetarian and Vegan a plus
Develops daily specials and exciting weekly/bi-weekly or monthly specials
Oversees restaurant operations purchasing, stocking, inventory control, prepares weekly orders and maintains a detailed
inventory. Updates' recipe cards as needed
Collaborates with the GM to set menu and menu pricing
Maintains a clean and orderly walk in-freezers/coolers/makes sure equipment is clean and properly maintained
Trains all kitchen staff and line cooks
Enforces all sanitation procedures, including guidelines and requirements
Leads supervises and coordinates kitchen staff in safe food preparation, kitchen safety and cleanliness
Coordinates food preparations for special events and functions
Resolves problems proactively and promptly and communicates to management team
Follows and adheres to Castle Resorts and Hotels standard operational guidelines
Must have food handler's card
