Job Title: Sous Chef

Location: Maui Country Club, Paia, Hawaii

Reports To: Executive Chef

Job Type: Full-Time

Job Summary:

Maui Country Club is seeking a talented and passionate Sous Chef to join our culinary team. The Sous Chef will work closely with the Executive Chef to oversee kitchen operations, ensure high-quality food preparation, and maintain exceptional service standards for our members and guests. Key Responsibilities:

Assist the Executive Chef in planning and executing daily menus for restaurant service, banquets, and special events.

Supervise and coordinate kitchen staff, ensuring efficient and high-quality food production.

Maintain high food safety and sanitation standards, ensuring compliance with health and safety regulations including Maui Health Codes, HAACP, and HIOSH.

Train, mentor, and support kitchen team members through ongoing development programs to enhance productivity, performance, and member satisfaction.

Oversee inventory management, including ordering supplies, maintaining accurate records, and minimizing food waste.

Contribute to the maintenance and cleanliness of all kitchen equipment and ensure adherence to preventive maintenance plans.

Monitor food quality, presentation, and consistency to meet the club’s standards.

Participate in menu development, cost control, and special event planning alongside the Executive Chef.

Assist in preparing for and monitoring budget goals, contributing to the culinary department’s financial success.

Ensure a clean, organized, and safe work environment at all times.

Lead the kitchen in the absence of the Executive Chef and represent culinary leadership as needed.

Collaborate on marketing initiatives by contributing ideas and support for promoting culinary offerings in club newsletters and events.

Promote a positive and cohesive Culinary and F&B Team environment.

Qualifications & Skills:

Proven experience as a Sous Chef or in a similar leadership role within a fine dining, resort, or country club setting.

Culinary degree or equivalent professional training is preferred.

Strong knowledge of various cooking techniques, kitchen operations, and food safety practices.

Leadership skills with the ability to train, motivate, and manage kitchen staff effectively.

Experience with recipe development, prep lists, and contributing to budget oversight.

Excellent organizational, communication, and time management abilities.

Strong attention to detail and a passion for delivering high-quality cuisine.

Ability to work flexible hours, including weekends and holidays, based on the club’s needs.

ServSafe certification or equivalent food safety certification is a plus.

Familiarity with kitchen software systems, Microsoft Office, and POS platforms is an advantage.

Physical Demands & Work Environment:

Regularly required to stand, walk, use hands, and reach with hands and arms.

Must be able to lift up to 50 pounds and work in a fast-paced kitchen environment.

Occasionally exposed to wet, hot, humid, or outdoor conditions.

Noise level is typically moderate, with occasional high volume during events.
