Job Summary:
The Daytime Line Cook is responsible for both cooking and food preparation duties during the daytime shift, ensuring all dishes are prepared to the restaurant's standards for taste, presentation, and consistency. This role requires a versatile and skilled cook who can efficiently handle prep tasks in addition to working on the line during service. The ideal candidate thrives in a fast-paced kitchen environment, maintains a high level of organization, and is committed to delivering exceptional food.
Key Responsibilities:
Food Preparation Duties:
● Ingredient Prep:
○ Prepare and organize ingredients for the day’s menu, including chopping vegetables, butchering meats, marinating proteins, and portioning out items for service.
○ Pre-portion, label, and store ingredients to ensure consistency and freshness.
○ Assist in making sauces, dressings, stocks, and other base ingredients required for service.
○ Prepare garnishes and accompaniments for specific menu items.
● Mise en Place:
○ Set up and organize workstations with all required ingredients, tools, and equipment for efficient service.
○ Ensure all prep work is completed in advance of service, including pre-cooking, blanching, or cooking items that can be finished quickly during service.
○ Assist in prepping items for special menu items or promotions.
● Storage & Inventory Management:
○ Assist with the organization and rotation of food in storage, adhering to FIFO (First In, First Out) procedures to ensure freshness.
○ Help monitor inventory levels and communicate with the kitchen manager or sous chef when stock needs replenishing.
○ Label and store prep items in a safe, organized manner to minimize waste and ensure quality control.
Line Cooking Duties:
● Cook to Order:
○ Cook and prepare food to order, ensuring that all dishes meet the restaurant’s quality standards for taste, presentation, and consistency.
○ Manage cooking times and temperatures to deliver food promptly and perfectly.
○ Set up and maintain your station during service, ensuring all ingredients and tools are within reach and ready for use.
● Quality Control:
○ Plate dishes according to the restaurant’s specifications, ensuring proper portioning and presentation.
○ Taste test food as needed to ensure it meets flavor profiles and adjust seasoning as necessary.
○ Monitor cooking times and temperatures, ensuring dishes are prepared correctly and promptly.
● Collaboration with Team:
○ Work closely with other kitchen staff to ensure smooth and efficient meal delivery during peak service hours.
○ Communicate effectively with both front-of-house staff and the kitchen team to ensure timely and accurate order fulfillment.
○ Assist with expediting orders, ensuring they are plated and sent out without delays.
Health & Safety Compliance:
● Follow all food safety guidelines, including proper food handling, storage, and sanitation practices.
● Maintain a clean, organized, and safe workspace, keeping equipment and utensils sanitized throughout the shift.
● Regularly clean and sanitize prep areas, cooking stations, and tools, ensuring compliance with health and safety regulations.
Additional Duties:
● Post-Service Prep and Clean-Up:
○ At the end of your shift, assist with closing duties, including breaking down your cooking station, cleaning, and restocking prep areas for the following shift.
○ Help ensure the kitchen is properly cleaned, sanitized, and ready for the next service.
● Assist with Special Requests:
○ Handle special dietary requests and modifications, working with the front-of-house team to accommodate guest preferences.
Qualifications:
● Experience:
○ 1-2 years of experience as a line cook or prep cook in a high-volume kitchen environment.
○ Experience with both prep and line cooking preferred, but not required.
● Skills:
○ Strong knife skills and ability to handle a variety of food prep tasks (chopping, slicing, dicing, etc.).
○ Knowledge of kitchen tools, equipment, and cooking techniques.
○ Ability to follow recipes, execute cooking techniques, and adjust based on customer preferences or special requests.
○ Good understanding of food safety practices and kitchen hygiene.
○ Ability to multitask and prioritize in a high-pressure environment.

Working Conditions:

● Hours:
○ Full-time or part-time, typically 8 AM - 4 PM (shift times may vary depending on business needs). Flexibility for evenings, weekends, and holidays may be required.
● Physical Demands:
○ Ability to lift and carry heavy items (up to 50 lbs).
○ Ability to work in a physically demanding environment, including bending, lifting, and moving quickly.
○ Comfortable working around hot surfaces and sharp kitchen equipment.
