Thistle & Grouse, A New American Casual Fine Dining Restaurant in the heart of Old Portland Portland, seeks qualified Line Cook and Prep Cooks to join our amazing team!

Helmed by Chef Bobby Will (Salt & Steel, Jean Georges Restaurant Group, Saltaire Oyster Bar), be part of a team driven to provide excellent creative cuisine using the best seasonal ingredients in a state of the art kitchen.

Open for Dinner Wednesday through Sundays, and Brunch Saturdays and Sundays.

Line Cooks:

2+ Years in Fine Dining or Casual Fine Dining Experience a must but will consider training the right candidate.

-Have Strong Knife Skills

-Properly Cook Vegetables, Starches, Grains, Meats and Seafood to Order

-Work Fast, Clean, Organized and Sanitary

-Have a passion for cooking and looking to grow. Growth potential available for candidates looking to grow to Sous Chef

Must be available 5 days a week, 2pm to 11:30 pm Wednesdays through Sundays.

Part Time Mornings Available for Saturdays and Sundays only.

Prep Cooks

Available Tuesdays through Saturdays, 8am to 3/4pm

-have Strong Knife Skills

-be able to properly blanch, roast, steam, and prep vegetables, starches, grains

-have a strong fundamental of basic culinary techniques

-Be Self Motivated, trustworthy, and passionate about cooking high quality food

-work fast, organized, sanitary and clean.
