My Ideal person would have all the experience in all aspect of the front end. Experience in Hand tossed pizza, Grill, and making subs. Cleaning, inventory, making sure there all following procedures.
I have a great crew. I don't mind paying for the right experience. If you have pizza and sub shop experience, then call me. Let's talk and see if you are a good fit for the great restaurant I built.
As an owner I want to open the restaurant. Cook my sauces and prep what needs to be prepared for consistency. The one thing I have learned about hiring people with experience is the change of my product.
