My Ideal person would have all the experience in all aspect of the front end. Experience in Hand tossed pizza, Grill, and making subs. Cleaning, inventory, making sure there all following procedures.
I have a great crew. I don't mind paying for the right experience. If you have sub shop experience, then call me. Let's talk and see if you are a good fit for the great restaurant I built.
