Job Summary: Dietary Services Dept. 7820 / 7800 Job Class: 322 Minimum Qualifications: Ability to read and communicate verbally. Basic computer skills. Core Duties and Responsibilities Follows correct procedure for thawing foods (cold running water, pulling food from freezer ahead of time. Prepares food/beverages according to standardized recipes, including garnish, so that food is ready at appointed meal times. Utilizes appropriate serving utensils (scoops, ladles, etc.) Set-up of steam table to include both hot and cold food items. Serves on tray line in assigned position to include adding condiments/beverages to meal trays, serves food per MD order and resident food preferences, loads trays on cart, and transports trays to resident care areas. Reads, understands, and creates food from menus for regular, therapeutic, and modified diets and serves according to portion sizes Stores leftovers properly to include labeling, proper cool down methods (ice bath, smaller, shallower pans), etc. Assists/prepares foods for special events, guest/employee trays, alternate meals, snack/supplement schedule, etc. Ensures that incoming stock is labeled, rotated, and stored properly; knowledgeable about delivery schedule. Cleans assigned work area according to work schedule. Operates dish machine to ensure that all resident dishes are cleaned, sanitized, and stored properly (no wet nesting). Ensures that all food carts, pots, pans, & utensils are properly cleaned, sanitized, & stored. Ensures that all floors are cleaned and mopped daily. Assists in keeping all equipment clean and orderly. Ensures that the walk-in cooler and freezer remain orderly. Assists in keeping the upright refrigerators clean and orderly. Stores cleaning/sanitizing agents in appropriate closet, away from food. Maintains food temperature and refrigeration logs. Labels leftovers with name and date and ensures that these items are properly disposed of within 48 hours if not used. Maintains Sanitizer Level Log through documentation of water temperature and sanitation level at each meal. Maintains Dishmachine Chemical Log through documentation of water temperature and sanitation level at each dishwashing period.
