The Butcher is responsible for the daily production of meats, poultry, fish, patties and sausages in the butcher shop, cutting, curing, slicing, yielding, and weighing of all butcher shop products for the hotel and the proper labeling and storing of products.  Job Responsibilities: The Butcher is also responsible for portion and quality control. Conducting product inventories. Guides & trains trainees. Maintains the cleanliness and sanitation of work areas and equipment in accordance with Health Department standards.
