The Sommelier at Delilah is responsible for delivering an exceptional luxury dining experience through expert wine and beverage service while supporting the restaurant's commitment to Forbes Five-Star hospitality standards. This role serves as a beverage ambassador, guiding guests through an extensive wine, champagne, cocktail, and spirits program while collaborating closely with service and management teams to create memorable dining experiences.The Sommelier is responsible for beverage recommendations, sales, inventory management, wine list maintenance, staff education, and ensuring flawless execution of wine and beverage service standards. This position plays a critical role in enhancing guest satisfaction, driving beverage revenue, and maintaining the excellence of Delilah's renowned dining experience.Key ResponsibilitiesGuest Experience & Beverage ServiceDeliver exceptional, personalized service consistent with Forbes Five-Star standards.Greet guests in a warm, welcoming, and engaging manner.Develop meaningful guest relationships to encourage repeat visitation and loyalty.Provide expert wine, champagne, spirit, cocktail, and beer recommendations tailored to guests' preferences and dining selections.Execute proper wine presentation, decanting, and service procedures.Conduct tableside beverage service with confidence, professionalism, and attention to detail.Anticipate guest needs and respond promptly with a sense of urgency.Communicate effectively with guests, service team members, culinary staff, and management.Ensure guests receive an elevated experience throughout all dining and lounge environments.Bid farewell to guests in a gracious manner and encourage future visits.Wine Program & Inventory ManagementMaintain comprehensive knowledge of all wines, spirits, beers, cocktails, and non-alcoholic beverage offerings.Assist with maintaining and updating wine lists to ensure accuracy and consistency.Monitor wine inventory levels and assist with ordering recommendations.Receive, inspect, and properly store wine and beverage shipments.Perform regular beverage inventories and assist with reconciliation processes.Update inventory locations, bin numbers, and product information accurately within designated systems.Monitor wine storage conditions to ensure product quality and integrity.Reduce waste through proper handling, storage, and service practices.Coordinate product exchanges and resolve inventory discrepancies as needed.Stock and organize wine storage areas before, during, and after service.Assist with wine pairing preparation, special event beverage organization, and by-the-glass program execution.Training & LeadershipServe as a beverage resource and mentor for service team members.Educate and train employees on wine knowledge, beverage offerings, and service techniques.Conduct regular wine tastings, beverage classes, and product knowledge sessions.Promote beverage sales opportunities through ongoing team coaching.Reinforce service standards and ensure consistent execution throughout the dining room.Actively participate in pre-shift meetings and departmental training programs.Partner with management to enhance beverage programs and guest experiences.Operational ExcellenceFollow established service sequences and operating procedures.Complete opening, closing, and side work duties accurately and efficiently.Maintain designated service areas, wine stations, and storage spaces in a clean and organized manner.Ensure compliance with all health, safety, alcohol service, and company policies.Maintain working knowledge of hotel amenities, entertainment offerings, and local attractions.Support floor operations as needed, including assisting with seating arrangements and service coordination.Attend required departmental meetings and training sessions.Maintain a polished, professional appearance in accordance with Wynn standards.Perform all other job-related duties as assigned.
