Job Overview

As the Chef de Cuisine at Historic Chambers Landing, located on Lake Tahoe's beautiful West Shore, you will be the culinary leader responsible for overseeing all kitchen operations at Chambers Landing Bar & Grill.

Position Type: Seasonal for 2024 Summer, Full-Time (starting April/May2024)

Responsibilities

- Ensure kitchen staff adhere to quality, hygiene, and cleanliness standards, maintaining a safe and sanitary work environment.

- Manage supplier relationships, ensuring the procurement of quality goods at reasonable prices.

- Oversee inventory management, including ordering stock as needed to meet operational requirements.

- Plan and execute menus for large parties, groups, and events, ensuring exceptional culinary experiences.

- Supervise maintenance of kitchen equipment, arranging repairs when necessary to minimize downtime.

- Address staff issues, including attendance, sick leave, and disciplinary actions when required.

- Ensure guests receive excellent service and enjoy their culinary experience, maintaining high standards of customer satisfaction.

- Perform effectively in a high-pressure, fast-paced environment, ensuring smooth kitchen operations.

- Demonstrate excellent organizational skills to streamline kitchen processes and ensure efficiency.

- Utilize in-depth knowledge of all kitchen sections to manage operations effectively.

- Exhibit strong leadership skills to motivate and manage the kitchen team efficiently.

- Demonstrate solid financial acumen, including budget management and food cost control.

- Manage inventory effectively, utilizing invoice tracking software and budget allocation strategies.

- Showcase creativity and superior culinary skills to develop exceptional dishes for the menu.

- Possess computer literacy, including proficiency in relevant software programs such as point-of-sale systems, Microsoft Office, and Google Sheets.

- Apply business acumen to make sound decisions regarding menu prices and kitchen processes.

Skills & Requirements

- Proven experience as a Chef de Cuisine or similar role in a high-volume kitchen environment.

- Culinary degree or relevant certification preferred.

- Strong leadership and management skills.

- Excellent communication and interpersonal abilities.

- Ability to work well under pressure and adapt to changing priorities.

- Familiarity with industry-standard software programs and inventory management systems.

- Knowledge of food safety and sanitation regulations.

- Availability to work evenings, weekends, and holidays as required.

- All candidates must possess a valid Food Handlers Certification issued by an accredited agency recognized by the State of California.

- Flexibility to work evenings, weekends, and holidays as needed.
