We are looking for a professional Executive Chef / Kitchen Manager for Roost restaurant, to keep and maintain company standards: the food looks great and is cooked properly, the proportions are correct, and it is cooked and served quickly. Also make sure that the kitchen is properly cleaned on a regular schedule, waste is disposed of properly and the kitchen meets all sanitary standards. Requirements include:
Key Responsibilities:
Menu Planning: Collaborate with the restaurant management team and chefs to plan menus that align with the restaurant's concept and target market. Consider seasonal ingredients, food costs, and customer preferences in menu development.
Food Preparation: Oversee the preparation and cooking of dishes to maintain consistency, taste, and presentation. Ensure that all recipes are followed accurately, and food quality is upheld.
Inventory Management: Monitor and control kitchen inventory, including ordering ingredients and supplies as needed. Implement strategies to minimize waste and control food costs.
Staff Supervision: Lead and train kitchen staff, including cooks, prep cooks, and other kitchen personnel. Provide guidance, set performance expectations, and conduct regular evaluations.
Safety and Sanitation: Enforce health and safety standards in the kitchen, adhering to local health codes and regulations. Maintain a clean and organized kitchen environment and ensure proper storage of food items.
Equipment Maintenance: Oversee the maintenance and operation of kitchen equipment. Schedule regular inspections, repairs, and maintenance to keep all appliances in working order.
Time Management: Efficiently manage kitchen operations during peak hours, ensuring timely preparation and delivery of food to customers.
Budgeting: Work with the management team to establish and adhere to the kitchen budget. Monitor expenses, analyze financial reports, and implement cost-saving measures without compromising quality.
Collaboration: Foster effective communication and collaboration between kitchen staff and front-of-house teams to ensure seamless service and customer satisfaction.
Food Safety and Hygiene Training: Conduct regular training sessions for kitchen staff on proper food handling, hygiene, and safety procedures.
Special Events and Catering: Coordinate and execute kitchen operations for special events, private parties, and catering functions.
