Senior Sous Chef/Event Chef required for small restaurant company (one bistro, one fine dining) with wedding and event catering, based in Roxbury in the Catskills. Full-time accommodation with all bills paid available for the right applicant. Full-time position, until end of September, flexible end time. Could be extended by agreement. Requirements - you must be able to be the lead chef in a mid-level fine dining restaurant. This is not a sloppy chicken parm story. You will know how to make chicken stock, braise a short rib, clean a salmon. You will sometimes be lead chef in the bistro banging out quality burgers, steaks and wings etc. You must be able to prep and deliver a quality wedding. The position is a mixture of event work, and restaurant work, more restaurant than event. The restaurant work is hands-on; you will be cooking, not standing at the pass checking ticket times. Event prep will be daytime. Event service will be afternoon and evening. The restaurant work is evening. The position is 5 days per week, no crazy hours, no endless covering for other people/working late etc Good, happy, existing team. This could be a fun summer spot in the beautiful Catskills. It’s pretty, you must like the country, there is no cinema, no nightclub, no Walmart nearby. Could potentially be a Head Chef position for the right person.
