The Chef I reports to the Executive Chef and is responsible for managing all aspects of meal service to meet organizational standards and service goals. This individual oversees food preparation, food safety, and sanitation at our primary location, and performs monthly inventory and food safety inspections at our location. He/ She develops and maintains appropriate support systems for food (food-bank, fresh/frozen food, dry goods, donated items, disposables, and sanitation supplies), menu planning, coordinates transportation of meals to our satellite locations, storage of food, maintenance of kitchen equipment and the dining service area. They ensures that the people (staff and volunteers) are properly prepared to serve meals and that the client areas are properly maintained before, during, and after serving periods. The Chef I assist with the planning and execution of special events to benefit and support the organization as required. The Chef Manager is involved in frequent daily interaction with clients and may supervise up to 3 employees and volunteers.

Job Duties:

Food: Food, disposables, and sanitation supplies are maintained in inventory and stored properly. Menu planning occurs and meals are prepared and available to serve at all locations based on the anticipated demand.

Food: Quality meals and variety is provided in menu planning. Meals are to include protein, carbohydrate, fruit, and vegetable. At least six meals per week include some type of meat, and meal/alternative. Food is made available for clients with dietary issues or to distribute during the daytime or after hours in an emergency.

Food: Meals/Food are transported as the operation requires. This includes donation pick-ups, food for service at satellite locations, food stored off-site, and special events.

Sanitation: A bi-monthly inspection is performed and documented at the facility in assigned areas. This includes inventory levels, food safety and sanitation, equipment maintenance, and food storage.

Sanitation: Staff and volunteers follow food safety and sanitation procedures when preparing, storing, and transporting food. Volunteers are coached in the proper procedures to serve food and utilize sanitation procedures when cleaning equipment.

Relations: The Chef I assists with donations, client services, and volunteer operations. The Chef I guides these individuals to achieve daily goals. The Chef I maintains control and provides a safe environment for volunteers and clients during serving periods.

Administrative: Complete necessary inventory and orders for food and supplies as requested by the chef or director. Completes monthly inspections for food safety.

Assists in other areas of the organization as required to ensure smooth and efficient delivery of services for the benefit of clients.

Qualifications Preferred:

Minimum 2 years food service experience, with responsibilities including food preparation, menu design, ordering, and sanitation.

>1 year management experience

Solid leadership skills with high professional ethics and sound judgment

Ability to motivate employees and volunteers

Strong verbal, public speaking and written communication skills

Basic computer skills

Ability to adapt and be flexible to changing priorities

Capable of working under pressure, managing numerous activities simultaneously and meeting deadlines consistently

Valid NYS driver license with the ability to travel as necessary to support initiatives

Ability to work evenings and weekends as necessary, The current position may be 4 10 hours shifts (Tuesday, Wednesday, Thursday 9AM to 8PM and Saturday 8:30AM to 7:30PM)

Proven ability to interact with multiple constituencies, including agencies, community groups and funding sources

Experience working with guests and volunteers

Qualifications Required:

Ability to lift and carry 50Lbs multiple time during a shift

Ability to use commercial food service equipment and chemicals

Ability to stand for extended periods of time preparing and serving food - 3 hour periods

Ability to walk, push, and pull carts stocked with food and full food transport containers.

Friends of Night People, Inc. (FONP) is a non-profit organization that has provided essential supportive services to the homeless, destitute and working poor women, men, children, elderly and disabled of this community since 1969. Friends of Night People, provides free meals at six community kitchens in the City of Buffalo, distributes clothing, and assists individuals in need with referral services daily. Throughout the month medical, eye, and foot clinics are provided through area doctors at our facility.
