We feature contemporary, authentic Jamaican / Caribbean cuisine in the restaurant town of Rockville Centre, Long Island (very close to Queens). Your role as a Line Cook / Expeditor at DUNNS RIVER LOUNGE is extremely important to our success.
We are looking for someone full or part time with the opportunity for growth into a full time job and an even bigger role in our kitchen. We love to promote from within! Must be able to work nights and weekends. Caribbean food background a plus!
OBJECTIVES
The Expeditor is the lead communicator in the kitchen. He or she is ultimately responsible to make sure that the orders from the wait staff are communicated to the chefs and ensures that the food goes out quickly, accurately and in-style according to presentation guidelines.
RESPONSIBILITIES
Set up the line for service including: chopping vegetables, setting up steam tables, reviewing specials and keeping track of inventory and prep for service.
Assist chef with preparation of garnishes, sauces and anything else the chef needs.
Communicate guest's orders from the wait staff to the chefs according to required preparation times to ensure all meals are timely . Monitor progress of the order's preparation.
Help prepare appetizers using the fryer and other equipment to ensuring the proper sequence of the meal ordered at the table.
Plate and garnish meals prepared by the chefs to meet high presentation standards
Ensure that the dishes match the specifics of each order and communicate any special requests from guests.
Communicate effectively with wait staff to ensure food is sent out to guests immediately once prepared. Inform wait staff of any specials or changes to menu which have an impact on service during that shift.
Maintain high standards of cleanliness, organization and safety in the kitchen
Ensure dishes match specifications of order ticket and meet high presentation standards
Will be responsible for executing our "after hours" menu (frying, sautéing & more)
QUALIFICATION & REQUIREMENTS
At least 3 years experience working with food in a full service restaurant. Caribbean cuisine knowledge a plus!
Food Handler's Certificate a plus!
Grill / fryer and sauté experience
Exceptional organization, coordination and communication skills required
A passion for food, excellent customer service and team work
Available to work nights, weekends and holidays
Ability to stand, walk, reach, bend and maintain physical stamina for long shifts
MUST BE LEGALLY ABLE TO WORK IN THE US and be open to a background check.
