Job: Head Pastry Chef Location: Ultra Exclusive Members Club (opening Fall 2024), Manhattan, NYC Salary:$100,000 per annum plus excellent benefits A pastry role like no other, an opportunity to be a part of the most highly anticipated private members club in NYC… a role where you’ll be flown to London HQ to immerse yourself in the exclusive Mayfair private members clubs ahead of you taking control in NYC. We are looking for a talented and passionate Pastry Chef to lead the pastry team of this members club of comfort and discretion; where members’ needs are met with personality and humility. A beautiful, elegant environment of stimulating décor, celebrating outstanding food and extraordinary wine. Your culinary responsibility will lay in two separate restaurants and multiple bars inside the club, and will include managing and developing all members of the pastry team holding them accountable to the highest standards. You will be responsible for keeping in line with budgeting, food costs, on-boarding, training, and payroll. The pastry dishes and desserts on offer at the club will be of the highest quality from sourcing to execution of each dish – working to a fine-dining (Michelin) level, always. Key Responsibilities Recruitment, on-boarding and development of the pastry team Planning, organizing, and leading the kitchen A clear understanding of the clubs pastry and financial goals Responsible for preparing and maintaining the pastry budget Maintaining highest standards for health, sanitation, and safety standards necessary in food handling and overall cleanliness. Strong leader and operational pastry chef Maintain the company’s high hospitality standards. Responsible for educating and training staff on safe work habits and proper standards of practice. Purchase and produce top-quality ingredients, create seasonal dessert menus. Ensure strong relationships and collaboration between the front and back of house staff Shares the overall responsibility of proper storing procedures, food orders, food cost, equipment, sanitation, Allergy’s and hygiene to the clubs and local standards. Have a working knowledge of inventory ordering systems. Key Requirements: Minimum of 8+ years’ experience working in fine-dining and/or Michelin star establishments. A professional and polished attitude, a calm leadership style in a busy atmosphere NYC Food Protection Certificate Strong work ethic and customer-focused approach Previous management experience required Culinary trained and professional who is passionate and curious to develop and grow as a pastry chef Able to work nights, weekends and holidays, and variable schedule if needed Ability to coordinate multiple activities with attention to detail Ability to work independently, with minimal supervision Our client is proud to be an Equal Opportunity Employer.
