Sous Chefs/ Experienced Cook- Must Have NYC Food Handler's License

WHAT YOU'LL DO:
Responsible for culinary operations, ensuring quality and consistency of Dundu’s entire menu during shift
Able to training other kitchen crew in the use of all Dùndú recipes and all of our cooking processes
Responsible for ensuring kitchen team members are properly trained before performing tasks
Ensure all Dundu recipes, production checklist etc are followed consistently
Develop enough to become a reliable reference point for the team for questions on recipes, cooking processes and food quality
Ensure food production meets the pace of service (especially during peak periods of service) without compromising the quality of Dundu food.
Responsible for ensuring all food production meets all established DOH food safety standards during shift
Foster collaboration, team spirit and cooperation amongst kitchen team
Maintain an orderly kitchen operation, including storage, labeling, preparation, and all safety protocols
Responsible for ensuring kitchen team maintains an IMMACULATELY CLEAN and organized kitchen and food storage areas at all times.
Supervises proper maintenance and cleanliness of all maintain our kitchen facilities, culinary equipment and tools.
Tracking food inventory to provide relevant information for ordering to ensure sufficiency while avoiding waste.
Ensure the evening shift does all required prep and closes with confidence that the AM shift is setup for success and the restaurant is prepared for the next day's operation.
PHYSICAL REQUIREMENTS
· Able to stand and/or walk for an entire shift
· Ability to lift up to 40Lbs
· Must be able to maintain close to constant communication with multiple individuals.
· Must be able to work in a constant state of alertness and safe manner
· Must be able to bend and reach overhead often.
· Must possess dexterity to handle tools and equipment ranging from small to large.
EXPERIENCE REQUIREMENTS
· At least 3 years experience as a Sous Chef leading other cooks
· Required culinary experience as a Line Cook in an establishment where all food was made from scratch
. Must Have Experience with volume cooking
· NYC DOH food handler's certificate is MANDATORY
