Mama Crow’s was just ranked as one of the best new restaurants in Raleigh and focuses on top quality burgers, the most local and freshest salads, and all within the #1 Transfer Co. Food Hall in downtown Raleigh. Both our food hall and restaurant is growing and we are looking for the next member of our team; Kitchen Manager. We also participate in the catering of the new Transfer Co. Ballroom and need someone with a strong culinary background that not only understands a fast casual setting, but catering and banquet hall style operations.

The Kitchen Manager will oversee the entirety of the operations ensuring the food service and staffing aspects of the restaurant. Effectively managing costs, inventory volume and quality control standards are pivotal for the profitability of the business. The candidate will be asked to provide strong leadership and management skills to promote a team oriented atmosphere at all times. Duties include ordering food, preparing menus, monitoring staff, and ensuring catered events are a success.

Requirements / Qualifications

Interview, hire, train, develop and coach.

Administrative activities like focusing on and ordering inventory, completing FOH and BOH orders and scheduling.

Experience planning and preparing for daily catering business.

Ensure food safety, quality and presentation are always on point.

Support and an active role in the restaurant and food hall where needed at all times.

Culinary management experience within a high volume fast-casual kitchen with the ability to demonstrate a passion for people and food.

Responsible for hiring, training, developing, and scheduling staff. Ability to create a team that will have leaders emerge and work well together.

Commitment to food quality, recipe adherence, and consistency. Has a strong grasp of health and sanitation requirements and runs a clean kitchen accordingly.

Strong understanding of cost controls within food cost and labor. Ability to put systems in place to enable consistent cost while ensuring a high quality product.

Proven ability to handle multiple responsibilities at once including restaurant operations and catering events.

Build and maintain vendor relationships, ordering schedules and necessary guides

Offer support and training opportunities for staff members to further develop culinary skills.

Meet all labor and food cost control guidelines, including inventory management

Upkeep of all building and equipment including maintenance and cleanliness.

Open to special event planning to include programming, menu creation and content development

Hire and train the staff to have comprehensive knowledge of the menu, recipes and kitchen standards

Prepares restaurant and employees for shift and ensures the restaurant is ready to be open to standards.

Inspects employees’ work areas for cleanliness to acknowledge employees’ work, delegate other cleaning duties, and/or okay him or her to go home.

Performs employees’ tasks such as preparing menu items and cleaning to ensure quality of the guest experience and to help employees.

Greets employees as they begin their shifts to promote an atmosphere where they feel welcomed, important, valued, and to ensure they are ready for work.

Inspects food items to ensure freshness and proper temperature.

Monitors restaurant to ensure everyone is providing quality food and service to guests and that safety and sanitation standards are being met.

Expedites food preparation to ensure food is prepared and delivered in a timely fashion.

Ensures all employees follow sanitation, safety, and security procedures (e.g., panic buttons, alarms).

Job Type: Full-time

Salary: $35,000.00 to $50,000.00 /year
