Ensure the daily meal is prepared in time for home delivered meals and congregate meals.Prepare food so it retains its nutritional value using approved US Foods recipesPlan meals for 1 2 days in advance.Temp and document temperatures prior to packaging and serving all foods.Maintain proper storage of all food. Practice proper sanitation and safety procedures.Document temperatures of all refrigerators and freezers on a weekly basis.Hairnet and apron must be worn.Proper handwashing and single-use gloves must be used when handling food.Scrape, wash, rinse and sanitize all dishes.Ensure kitchen appliances, equipment and dishes are clean and stored properly.Substitutions must be approved by the Site Manger or Director and documented.Food waste/garbage must be removed daily.Prepare a list of food and supplies for the Site Manager to order.Check groceries/supplies against invoice to ensure all items are accounted for.Put groceries/supplies away. Food items must include price and date received.Rotate stock based on first in first out.Visual inventory of food and supplies on a weekly basis.Work with Site Manager to find a replacement in own absence.Submit all monthly paperwork to Site Manager
