At Sweet Lucy’s Smokehouse, we're passionate about crafting mouthwatering BBQ that keeps our guests coming back for more. Our commitment to quality starts with the finest meats, and we are looking for an experienced Butcher to join our team and help us deliver the best cuts and preparations for our signature BBQ offerings. As a Butcher, you’ll play a key role in ensuring we have the highest quality meats, expertly cut and prepped for our smokers.
Butcher Responsibilities:
Cut, Grind, and Prep Meats: You’ll be responsible for cutting and preparing high-quality meats, ensuring they meet our BBQ restaurant’s standards for thickness, texture, and size—perfect for smoking, grilling, and BBQ perfection.
Maintain Tools & Equipment: Clean and maintain your tools, knives, grinders, and cutting surfaces to ensure the highest level of cleanliness and safety and accurately labeled.
Inventory and Stock Management: Track inventory, manage stock levels, and coordinate meat deliveries to ensure we always have fresh product on hand.
Quality Control: Inspect all meat deliveries for freshness and quality, ensuring everything meets our restaurant’s high standards before it hits the smoker.
Food Safety & Sanitation: Strictly adhere to food safety guidelines, sanitation practices, and health regulations to maintain a safe and clean work environment.
Collaborate with the Team: Work closely with our BBQ chefs and kitchen staff to ensure cuts are delivered in the proper format for smoking, and BBQ prep.
Butcher Requirements:
Experience: Previous experience in meat cutting, food preparation, or working in a BBQ kitchen environment is a must. Familiarity with BBQ meat cuts (brisket, ribs, pork shoulder, etc.) is a major plus.
Skills & Tools: Ability to handle and maintain butcher tools, including knives, grinders and other specialized equipment. Experience with manual and electric cutting tools.
Physical Stamina: Must be able to lift heavy cuts of meat, stand for long periods, and work in a cooler environment as needed.
Attention to Detail: Knowledge of various meat cuts, their use in BBQ, and how they should be prepped for optimal smoking and grilling.
Food Safety Knowledge: Understanding and adherence to food safety protocols, including proper storage, handling, and preparation techniques.
Team Player: Strong communication skills and the ability to work well with others in a fast-paced, team-oriented environment.
Work Ethic: Reliability, punctuality, and a strong sense of pride in your work.
